Is there any way to get married without getting married on that specific day?

My fiance's grandparents wed on September 19th, his parents wed on September 19th, and he would like to carry on the tradition. The next time September 19th falls on a Saturday is 2015 but we would like to get married in 2012, 2013 at the absolute latest. We do not want to get married in the courthouse on the 19th but have our actual wedding ceremony on a different day. We want it to be that when we say our vows for the first time and ONLY time with our families and loved ones there and not some judge we do not know. We also want to actually have a ceremony since that's something very important to us. Is it at all possible to get married on a different day then when your marriage license says without getting married in a courthouse first?
